One of my favorites dishes, packed full of flavor. Sweet and salty soy sauce with a spicy kick from the peppers. Aromatic garlic, green onions and Thai Basil make it fragrant. This super simple recipe, which takes me back to the days of back-packing in Thailand. All you need is white rice and if you want, top it with a fried egg.
I always like to have all my ingredients prepped and ready before anything gets cooked, this prevents you from forgetting something in the dish.
Two garlic's minced, its not in the minced in the photo so don't mind. Dark soy sauce 1/3 cup with extra if you want your dish to have a bit more color and saltiness. I mainly use dark soy for color and add salt for more flavor like in the photo . 1 tbsp of sugar and pinch of black pepper. Im asian so I grew up using msg so I added a pinch
A couple of med heat peppers cut on an angle/bias. I personally would use Thai red chili which are very hot, but i was cooking for my family. Had to bring it down a notch. Two green onions chopped, a handful of thai basil pick left whole, if the leaves are too large, cut in half or rip in half by hand. Then last is a pound of ground chicken. you can use more chicken if you would like. 1lb was enough for 3-4 if your eating with white rice and fried egg
in a wok add a tbsp of vegetable or canola oil to hot wok. Med heat. Stir fry the garlic and peppers for a min with the ground chicken.
once chicken starts to cook and change color a bit, add the seasonings. Salt, dark soy sauce, sugar, msg, black pepper. stir fry and mix the ingredients well for a couple mins.
At this point you want to taste and adjust with more salt or sugar. Then finish with the aromatics and garnish, chopped green onion and Thai basil. Italian basil will not work, sometimes in Asian markets the basil is labeled as cinnamon basil, this is the same.

1-2 Thai Chili pepper sliced
2 Green onion bunch sliced
1/4 cup Thai Bail loose chopped
2 Garlic cloves fine minced
2 Tbsp Dark soy
2 Tbsp Sugar
1/2 tsp salt
pinch of black pepper
